Event Description:

Party in a chocolate shop - our unique venue serves as production kitchen, event space and classroom. Our secret backyard garden is the perfect place to begin with a guided craft chocolate tasting and geek out session about our favorite subject - chocolate!

We typically serve a little sparkling rose with the tasting as a palate cleanser. Next you'll put on your aprons and learn to make chocolate ganache, the basis for fancy French desserts, including chocolate truffles! Finally you hand roll and finish a dozen truffles to take home, along with your ganache 'homework'.

Event Itinerary:

  1. Guests will arrive & store their coats & bags, etc.
  2. Weather permitting, guests can await the rest of the party in our backyard garden.
  3. Once everyone is present, we'll move inside to our tasting stations to begin the guided tasting.
  4. Wine is poured and guests will be treated to an interactive discussion and craft chocolate tasting lasting approximately 40 minutes.
  5. After the tasting guests enjoy one of our handcrafted chocolate truffles for some inspiration.
  6. Next, we'll don our aprons and learn to make chocolate ganache (container is taken home for 'homework').
  7. We'll then outfit everyone with gloves and hand roll and finish a dozen truffles using several different toppings.
  8. We'll then pack up the truffles and ganache we made and everyone will receive a handout with the recipe for basic truffles.
  9. Satisfied guests head back out into the real world of NYC, bellies filled with chocolate!

What You Will Make / Go Home With:

Each guest will go home with:

  • A box of truffles they made.
  • Extra ganache to make more at home.

About the Instructor:

Classes are taught by Roni-Sue herself or by our GM Sharon. Roni-Sue has been making confections for over 30 years and teaching a bean-to-bar-to-business STEM focused after school program for the NY Department of Education for the last five years. Both Roni & Sharon are partners in a bean-to-bar chocolate factory in Belize where they learned all about growing cacao and making delicious chocolate from it!

About the Venue:

Our production kitchen/classroom/event space on the LES has 1,000 sq ft of flexible indoor space and a large beautiful (partially tented) backyard garden. Everybody wants to party in a chocolate shop!

It was great! Really enjoyed the tasting and learned so much about chocolate and the different types. Had a blast making the truffles and loved that it is an easy recipe I feel I can replicate at home. Thanks so much for the experience!

Just amazing. The class was fun, informative and just all around great. Also we took home a bunch of treats. I would recommend this class to anyone that likes chocolate. The teacher really has passion about chocolate and it shows in the teaching.

Class was so awesome! Learned so much about chocolate. Rhonda was an amazing teacher and instructor. She had so many "insider tips" on making truffles, and on the chocolate industry in general. Class was very conversational, and Rhonda answered a lot of our questions about chocolate. 100% recommend this class. Perfect for any chocolate lover.
Dhruv V.
Fantastic class - learned a ton about the chocolate making world, what makes a good chocolate, and even got to taste a bunch of different types of chocolates. Perfect place for a date or birthday present!

We had a great time, learnt a lot and ate some quality chocolate with bubbly! Also took a lot to go....
The class was a great mix of informative and hands on. I learned a lot about the chocolate industry, enjoyed the sampling and getting to make my own truffles.

The class was fun, educational, hands-on, and yummy. Would definitely recommend!

I absolutely loved this class--it was wonderful to learn more about what aspects of the processing or growing process produces different types of results in chocolate. I also very much appreciated the accommodation the teachers made so that I could take part in the class (I got injured and couldn't stand at the prep table; they got a smaller table and chair so that I could still attend.)
The chocolate was delicious and learning the process was fun. However, there was not enough focus on the chocolate-making versus chocolate industry. We did not get to role or form the truffles in class which was a downer.

This class was fun and educational. You get to try chocolate samples from all over the world, ranging in different %s. I thought there would have been a little more of the cooking aspect, but overall it was a good class to take.

Fun, very informative, but you do quite little in terms of actual cooking which was a little disappointing.

This course covered a good amount of education, and had new things to learn for both the novice and the not- so- novice! Plus we got to take home unfinished truffle making supplies to practice at home! Ronnie was awesome!

The class was really informative and a great intro to chocolate. It would have been nice to make at least one more thing though. 3/4 of the class was instruction and chocolate tasting and only the last bit was spent working with the chocolate. Overall we really enjoyed it!

This class was so cool and you get to learn a lot of interesting things about the history of chocolate! Definitely suggest for chocolate lovers out there! The teacher was also very sweet!

This class was a lot of fun, very interesting, and a great gift for Mother's Day. Rhonda was very welcoming and made this a great experience. It was exciting to try the different chocolates and make our own truffles and ganache.
