This was a fantastic class. Chef Simon Herfray was the instructor and he did a wonderful job walking us through every step, answering all of our questions and was incredibly patient. Would take another class with Chef Simon in a heartbeat. And the bagels?? TO DIE FOR! My NY born and raised husband loved them. These will be a weekly bake for us!

Eve was enthusiastic and certainly knows her way around the kitchen. I had hoped to learn a few new tricks to add to my approach to bagels. The technique Eve used is far too labor intensive for me. I manage to turn out a dozen pre 1960 Brooklyn bagels in a fraction of the time with a food processor but I did note that some of the participants did manage to get decent results so the course was helpful and of value to them. I appreciate Eve’s effort and in no way wish to give the impression that I was dissatisfied. I was impressed with her knowledge and ability to explain the chemistry without appearing like a pedant like me.

Great teacher! Great bagels! Eve was patient and encouraging. Problem - she needs to send instructions to me when class started. I did get an email but the link wasn’t highlighted and cutting and pasting into browser didn’t work. As a result, I was a bit behind which was uncomfortable.

Our bagels were great. Easy to follow. Good pace. Lots of answers. The teacher Eve was very good.
